Paleo Spicy Kickass Chili!

Who has two thumbs and loves chili? This guy does. I remember getting chili at this little place near me called Chili My Soul, and they had 20 different kinds. He sold his chili to restaurants all over Los Angeles, and the U.S. He had a number system to rate the spicy fire of each chili. He had ones from 1-11. I know 10 is usually the highest number when used to gauge a range, but he had one that was an 11! That's right an 11!!! I couldn't even smell that one without my sinuses clearing up immediately. And my eyes watering for 10 minutes. It was like snorting fire, literally. My favorite was this chili called "Texas Pride," and was rated at a 5. It was a perfect blend of meat, veggies and flavor with a medium kick to it.

Since going Paleo, I totally missed having this chili. I've seen a bunch of recipes for Paleo friendly chili and wasn't super impressed. So after digging around for a bit, I finally modified a few ingredients here and there from a few different recipes, and after four or five times trying this out, I finally nailed it to where I exactly want it to be. It tastes so close to the "Texas Pride" I remember so well. It's like I'm at the place again enjoying a small cup of this deliciousness. I hope you enjoy this like I do. This is really easy to prep & make. You will need a crockpot for this and 5 hours for total cooking time. First time I tried to make this I started it at 8pm and had to stay up extra late to turn it off and put in the fridge. Never made that mistake again. 

Ingredients: 

1 pound Grassfed Ground Beef (or other protein; ground chicken, turkey or pork.
1 tsp Fat of choice
6 Cloves of Garlic through a garlic press
1 medium onion diced
1 28oz Can of  Muir Glen Organic Diced Tomatoes
1 Red Bell Pepper - Chopped
5 Stalks of Celery - Chopped
3 Large Carrots - Chopped
4 Habaneros
2 Jalapenos
1 TBSP Chili Powder
2 tsp Dried Oregano
1 tsp Paprika
1 1/2 tsp Ground Cumin
1 tsp Sea Salt
Cooked Bacon Bits

Directions

  1. Set pan to medium heat
  2. Add fat of choice and when hot, saute garlic and onions for about 2-3 minutes.
  3. dd Ground Beef, mix together well and brown the meat.
  4. Deseed peppers, chop roughly and use a food processor to mince peppers together. 
  5. In a crockpot, add all the ingredients together, including browned meat mix.
  6. Mix in all ingredients until well combined.
  7. Turn on crockpot, set to Low and cook for 5 hours. 
  8. Top with Bacon Bits and enjoy!
