Quick No-Cook Egg Breakfast

From a guy who used to never cook, I absolutely love to make breakfast. Usually it takes me between 25 and 45 minutes to make exactly what I want, every time. But there are those days where I just don't have the time and I have to slap something together within 5 or 10 minutes and scarf it down... cause I gotta go😁 This was one of those mornings. Back in the day this would have been a bowl or two of sugar cereal & milk or a bagel with cream cheese kinda morning. Paleo to the rescue!! Instead I'm having 3 hard boiled eggs, red onions, avocado, scallions and mushrooms topped with coarse black pepper and Franks Red Hot Sauce. Healthy, nutritious and delicious.
